The royal town of Znojmo, washed by the waters of the river Dyje, a town full of remarkable historical monuments, some of which are also included in the prestigious lists of cultural monuments of the Czech Republic, the centre of one of the sought-after wine sub-regions, is a place that offers much more than it would seem at first glance. Right in the centre of the town, on the south side of the square, stands one of the most valuable townhouses built in the fifteenth century. The Wine House. Our winery is located and works in the heart of the historic centre of the ancient city of Znojmo, in the walls of an early Renaissance burgher and trade house from the fifteenth century, on several floors of its stone cellars. Our ambition is top notch selection, diversity and quality. Every year we fill about 20 000 bottles with fine wine, partly from grapes from our vineyards at Kraví hora near Znojmo (2.5 ha) and Hnanice (0.5 ha). We do not have a one-sided focus, on the contrary, we try to learn and master as many traditional and modern approaches to wine production as possible. Thus, among our products you will find wines produced in stainless steel tanks, but also in oak and acacia barrels and even in Georgian clay amphorae called kvevri. These are buried up to their necks in the ground in the passageway of the house, giving our visitors a glimpse of technology that is more than eight thousand years old. But we don't just stick to technology, we also experiment with wine styles - you'll find pure, reductive, natural, oxidative and unfiltered wines with a subtle opal haze. We try, taste and discover. And only what we like ourselves, we offer to our customers. Wine is a joy and we strive to make it a shared joy.

In the FRESH range we offer very young wines, so young that we start selling them in the same year that the grapes are harvested. They are made for those who are eager and impatient, who thrive to guess how good and how different a vintage will be, because the FRESH wines represent its pledge. That is why they are not stored and are consumed immediately.

The light sparkling wines of the SPARKLES range are carbonated during bottling. They are typical representatives of the increasingly popular “frisée”, i.e., wines intended for summer gatherings. They should be drunk within two years.

Selection

Selection

The SELECTION series is the real flagship of the Nešetřil Winery. Only carefully selected grapes of superior quality are used to produce these wines. The wines adorning this range are blended for a minimum of six months on fine yeast lees, which – together with the high content of sugar-free extract – is an important basis for their typical fullness and unique robustness of flavour. The wines of the SELECTION range can last up to five years in the cellar.

Special Kvevri

Special Kvevri

We are also proud of our SPECIAL KVEVRI wines. Their production is actually no different from the way wine was made in ancient Georgia as early as the sixth century BC. After the grapes are milled, the mash is fermented with a small portion of the pomace in clay amphorae ქვევრი (kvevri) buried up to the neck in the ground. The wine is left on the skins and lees for six months before being carefully bottled in stainless steel containers and bottled after about three weeks. And that's it. No additives are added to the wine during the vinification process, i.e., no yeasts, nutrients, enzymes, clarifiers or anything else. The resulting wine is not filtered, so it has no sparkle and is slightly opalescent. It is full-bodied, multi-layered and well suited for archiving, again for at least ten years.

The same varieties are used for the production of the SPECIAL BARREL range as for the SELECTION range, but the processing is different. Vinification takes place exclusively in oak or acacia barrels, in which the white wines are trained until approximately August of the year following the harvest before being bottled. The red wines are then kept in barrels for at least two years. The SPECIAL BARREL range is very well suited to archiving for a minimum of ten years. Time is kind to these wines and adds to their expression and harmony.

The sparkling wines of the Special Sekt range are produced using the traditional method of secondary fermentation in the bottle. For the production of sparkling wines, we use mostly Burgundy, Chardonnay, Pinot Blanc, Pinot Gris, but we also experiment with varieties grown in more northern wine regions, such as Grüner Veltliner, Riesling or Riesling Italico. The choice of variety, the raw materials, the method of making the primary wine, the length of time it sits in the bottle on the lees - all this is the art and guesswork of the winery cellar master. The resulting sparkling wines are cellared for a minimum of 18 months and are finalised in the Brut Nature, Extra Brut or Brut categories.


We like noble beverages that taste good and spark the imagination. And beer is definitely such a drink, along with wine, especially if its production is approached creatively and with artisanal forte. Our cellar master, when he's not making wine, has a really nice hobby - he's becoming an enthusiastic brewer.

And because we love diversity of flavours and styles, we embrace it in our beer making. Each batch is authentic and polished - our annual exhibition is a maximum of 50 hectolitres. Our beers are top-fermented, strong, unfiltered and unpasteurised. Their colours are influenced exclusively by malt, and in the case of fruit beers by fruit.

No caramel or colouring agents. And if we experiment with wine, we do it with beer as well. We look for optimal recipes, use different types of hops, different yeasts, different lengths and temperatures of preparation… Our offer is constantly changing - with us you will taste only what we have just brewed.

Jonatán

Straw yellow to gold is the colour of our blonde beers. They are based on barley malt with a small addition of wheat malt. This gives the beers a smooth and slightly fruity aroma. Our pale ales have a full body, medium body and medium bitterness. And if you're looking for a typical representative of our pale ales, it's Belgian Blond Ale.

Dark copper, but also mahogany and black is the colour of our dark beers. It is mainly influenced by specially roasted malts with a small admixture of oat flakes. Our dark beers are fermented and aged in a port wine barrel and have a typical aroma of coffee and bitter chocolate underlined by a subtle hint of wood. They have a full body, lower bitterness and high bitterness. Stout is a typical representative of our dark beers.

Pale straw yellow is the colour of our fruit beers, but the addition of fruit during fermentation gradually turns it a deep red. We use only local fruit - blackcurrants, cherries or sour cherries. Our fruit beers have a light body, higher bitterness and medium bitterness. They gain their aroma from the added fruit, but the combination of hops chosen also plays an important role. American Pale Ale is a typical representative of our fruit beer style.


Chatka Winebar is the gastronomic heart of the Wine House. It offers a complete portfolio of wines from the Nešetřil Winery that is located directly in the cellars below the house. In addition to the Nešetřil Winery, the wine list of the Chatka Winebar includes a selection of wines from varieties typical of the Znojmo wine region, but originating from places where they reach world-class quality - Grüner Veltliner from the Wachau, Rhine Riesling from the Rheingau, Sauvignon from Styria or the Loire. And you can compare…

The principal essence of gastronomy in the Chatka is quality and taste. Our cuisine is not regionally specific, it is neither purely Czech nor does it lean towards any of the world's gastronomic styles. In fact, it is the same as our wines and beers – it is the result of a search for exquisite taste, joy and variety. The basis is, of course, locally sourced, high quality and fresh ingredients.

The spaciousness of the premises of the Wine House, complemented by the perfect facilities, makes it ideal for social and family gatherings, events and celebrations. There are 35 seats in the indoor area and up to 100 seats in the outdoor area. Celebrating a birthday, graduation or christening here, organising a wedding, corporate event or client meeting is a wonderful idea. However, it is also possible to book a turnkey event in the beautiful historic premises. The house is simply ready, you just need to express your wishes.

Guided tastings combined with a tour of the winery, including three floors of cellars under the house, which extend into the historical underground of the city of Znojmo, are also a great experience. It includes not only a wine tasting, but also an explanation about winemaking technologies and the history of the Znojmo underground. The tasting can be done in groups of 2 to 12 people, the price is 450 CZK per person. The tasted wines can then be purchased in the wine bar or in our store in the passageway of the house.


Those who want to taste as much as possible of what our winery, brewery and bistro have to offer in peace should be able to rest on the spot without compromising on the comfort they are used to. This is well served by the spacious two apartments. The large apartment (120 m²) located on the first floor consists of three large rooms that can comfortably accommodate up to eight people. The small new apartment (80 m²) is located on the second floor and is designed for comfortable accommodation for up to five people. Both apartments include a kitchen with a dining room and, of course, a bathroom with toilet and second separate toilet.

The location in the very centre of the town also invites you to wander around the sights of Znojmo. It is pleasant to go to the Znojmo underground, to the town hall tower, to the castle complex with the rotunda of St. Catherine, to the Louka monastery…
